Turkish summer weather is among the most reliable in the Med: long settled spells, warm water and no hurricane season. Weather rarely takes a day from a Turkey charter; it mostly decides which bay you enjoy it in.
When the meltemi does blow, it is the captain’s call, and that authority is written into every charter contract for good reason: on questions of safety the captain’s decision is final. In practice it means moving to the sheltered side of a headland or choosing a calmer cove, and this coast has protected options almost everywhere.
For protecting the charter fee itself against cancellation, that is an insurance matter; see cancellation insurance.
